Dorset’s Elder Magic

September is upon us, the warm sun changes direction and the night start drawing in.

In preparation for the winter,
I walked through the country lanes with a friend, collecting elderberries.

The English countryside is a wonderful place to forage.
Elderberries are in abundance this time of yearas is blackberrys and butterflies.

* Elderberry is used for its antioxidant activity, to lower cholesterol, to improve vision, to boost the immune system, to improve heart health and for coughs, colds, flu, bacterial and viral infections and tonsillitis.

It took some time to fork off the berries from the stocks than I cleaning them up and boiling them,  finally added sugar, cloves and

ginger cooking them for 20 minutes or so making elderberry syrup.

With the extra elderberries I decided to make some blue and purple ink. The recipe I found in this wonderful book The Domestic Alchemist.
